Brownie Cheesecake Tarts

January was one busy month. Holiday blues, a series of flu attacks, guests, and then daughter's birthday. The month seemed too short to fit in all the work. Now that it is over I almost feel jobless!! Nevertheless, the cooking classes are starting this week and I am looking forward to a new series even more successful than the previous one. Coming back to daughter's birthday, I decided this time to do the food myself and among other things, this cheesecake tart was the star of the entire spread and turned out awesomely delicious. If you want to step out of the regular cheesecake fad, then this is a must!
Ingredients
For the tarts
300 gms plain flour
150 gms cold butter, cut into cubes
Pinch of salt
1 egg (optional)
2-3 tbsp ice cold water for kneading (reduce quantity if using egg)
For the brownie
140 gms dark chocolate
1/4 cup butter softened
1/4 cup brown sugar
1 egg
1/4 cup plain flour
2-3 tbsp milk
For the cheesecake
250 gms (1 package) Creamcheese at room temperature
2 tbsp icing sugar
1/2 cup whipping cream
1/2 cup strawberry compote or sauce

Direction
Step 1: Making the tarts
Measure out the flour and butter and add the salt. Now keep the bowl in the freezer for 15-20 minutes to chill. Once done, take the bowl out and using your fingers or the dough hook of your stand mixer, start breaking the butter cubes with the flour till the mixture resembles breadcrumbs.
Now add the egg and mix. If not using egg, add the ice cold water 1 tbsp at a time till the dough just comes together. Do not make it wet. The dough should just hold together. If using egg, reduce the quantity of water to just about as much required to hold the dough together.
Now you can divide the dough equally into as many portions you require and tightly cling wrap it and freeze it if not using in the next couple of days or put in the refrigerator to chill until the next step. You can skip the dividing part and freeze/chill the dough as such tightly wrapped in cling wrap. Remember to slightly bring it to room temperature (not completely soft) whenever you are ready to use them.
Once the dough is chilled at least for 30 minutes, prepare your tart cases and start rolling the dough placed between two sheets of cling wrap. Carefully place the rolled out dough on the prepared tart cases and continue for the rest of the dough. If making a single tart, simply place the rolled out dough on the tart pan and ensure that the dough reaches until the edge of the tart case. Prick the base and sides with a fork and place a parchment paper filled with pie weights or raw beans.
Preheat the oven at 170 degree celcius and bake the tarts for 12-15 minutes until the sides are golden. Now quickly remove the weights along with the paper. You may at this point choose to brush the base with an egg so as to avoid a soggy base later. You can skip the egg wash though if you are a vegetarian. Now put back the tarts in the oven and bake for another 5-7 minutes until the base is golden. Remove from oven and let them cool.
Step 2: Preparing the brownies
In a bowl melt the chocolate and the butter either in the microwave or on a double boiler. Stir in between to avoid the chocolate getting burnt. Now to this add the sugar and the egg and whisk until smooth. Next add the flour and mix. The mixture will be quite thick at this point. Add 2-3 tbsp milk at room temperature depending on how fudgy or cakey you like your brownies.
Spread out the brownie batter on the single baked tart case or spoon out 1 tbsp of the batter onto the baked individual tarts and even out the top. The brownies will rise while baking. So it is important that you do not fill too much else there will be no space left for the cheesecake topping.
Bake in the preheated oven at 175 degree celcius until a toothpick inserted comes out clean.
Remove from oven and let cool until the next step.
Step 3: Preparing the cheesecake topping
In a bowl, take the cream cheese and beat till smooth. Now add the whipping cream and beat till smooth and incorporated. You do not need to beat them to soft peaks but well beaten and smooth. Now add powdered sugar as per taste and whip further. Keep aside and prepare for assembling.
Step 4: Assembly
Spoon out the cheesecake topping equally among all the brownie tarts or the single brownie tart and even out the top. Now with a spoon, scoop a small portion of strawberry (or any topping of your choice) compote or sauce on top of each tart and with a toothpick make swirls on top. Chill the tarts until served and enjoy!!

Classic Chicken and Mushroom Pie with Cheddar Cheese Short Crust Pastry

Conducting cooking and baking classes also means that I need to do my homework really really well. I like to give my class participants the best of all I know and so I do a lot of reading and experiments before I announce my next class. A pie and tart class has been long due and repeatedly requested and so here is my homework for the next schedule which is in November. There are three more recipes that I will need to try. Stay tuned!! Do read my notes at the end for vegetarian options.
Ingredients
For the filling
1 chicken breast, about 150 gms, cut into medium pieces
200 gms white button mushrooms quartered
1 large onion chopped
2 cloves garlic chopped
1 tbsp chopped parsley
1 tbsp chopped rosemary
1 tbsp olive oil plus more if required
2 tbsp butter
2 tbsp flour
200 ml milk
200 ml chicken/vegetable stock
Salt and pepper to taste
For the pie crust (for a 22 cm pie plate)
1 cup all purpose flour/maida
2 tbsp butter, chilled
2 tbsp vegetable shortening , chilled
Pinch of salt
4 tbsp grated cheddar cheese
1 egg (I used a little less than 1 large egg)

Direction
Start with making the pie crust first. Take the flour, salt, butter and shortening and start rubbing the fat into the flour with your fingertips until the mixture resembles bread crumbs. There should still be some traces of butter and shortening visible in the mixture. Do not overmix.
Now add the grated cheese and the egg, little at a tine, till the dough just comes together. We don't need a smooth or fine dough. Just the one which holds everything together. I used little less than 1 large egg.
Cover the dough with cling wrap and refrigerate till further use.
Now start preparing the filling. Heat oil in a pan and add the chicken pieces. Fry till they turn white. Now add the mushrooms and fry on high heat till the moisture evaporates and the chicken and the mushrooms turn slightly golden. Remove from the pan and keep aside.
Now, in the same pan, add a little more oil if required and fry the chopped onions and   garlic till translucent. Remove from pan and keep with the chicken.
Now, to make the sauce, you can either use the same pan or use a new one. Heat the butter and add the flour. Stir till you get a lovely aroma and the flour looks pasty. Now mix the milk and the stock and add it to the pan along with salt and pepper. Stir on a medium flame till the mixture thickens and coats the back of the spoon.
Now add the chopped parsley and rosemary and mix and remove from heat. Put the chicken mixture into a pie plate and pour the sauce over it. Spread to evenly cover the chicken beneath. Keep aside and let it cool.
Preheat the oven at 200 degree celcius for 10 minutes. Now, take a parchment paper and spread it out on the kitchen counter. Take the dough out of the fridge and remove the cling wrap. Put another sheet of parchment paper or cling wrap and using a rolling pin, roll out the dough gently from all sides to a uniform thickness of about 3 mm and just enough to cover the top of the pie plate.
Brush the sides of the pan with egg wash. Gently lift the rolled out dough and place it on the pie dish covering the edges and sitting on top of the filling. Seal the edges with your fingertips and filling in any edges with scrap dough. Make some cuts in the center to let the steam escape.

Brush the top with egg wash and bake in the preheated oven for 20-25 minutes till the edges and top and browned and crisp. Remove from oven and let it cool for sometime before serving.
Notes:
1. You can use any assorted veggies instead of the chicken like broccoli, sweet corn, carrots, beans, spinach, or cottage cheese as well.
2. You can use 2-3 tbsp ice cold water instead of the egg while kneading the dough.
3. You can skip the egg wash if you are a pure vegetarian. You can use milk wash instead but the shine won't be there.

Wholewheat Bread

Conducting bread baking classes at home are proving quite beneficial to me in a way that my breads are getting better and more perfect than what they used to be. Since I am the instructor, it is extremely important for me to practice all my demo recipes before the class and thus perfection sets in. I am in love with my breads now more than ever before and hate to buy a loaf from the store even if it means taking a sweat shower in the kitchen in the unbearable Singapore heat!!
Ingredients
2 cups wholewheat flour sifted (I have found Sharbati Atta of any brand gives you the best results; here, I have used Pilsbury Gold but Peshwai or Ashirwaad Sharbati will work equally well)
1 cup bread flour or all purpose flour
3 tsp or 1 tbsp instant yeast
1 tbsp sugar
2 tsp salt
1/4 cup milk powder
250 ml warm water not exceeding 41 degree celcius or comfortable enough to hold a drop on the back of your wrist
2 tbsp butter room temperature (I use low fat margarine)
Olive oil for greasing

Direction
Proof the yeast first. Dissolve the sugar into 150 ml warm water and mix in the yeast. Let it stand for 10 minutes till frothy and increased in volume.
In another bowl, mix the flour, salt, and milk powder. Now make a well in the center and pour in the yeast and start mixing the flour and the yeast liquid. Once all the liquid is covered by the flour, start adding in water little atva time until all the water is used up (remaining 100 ml). With wholewheat breads we have to ensure that the dough is not dry but smooth and soft to the touch with slight traces of stickiness. A dry dough will result in a dry crumbly bread.
Now transfer the sticky dough to a clean and floured work surface and using both your hands, start kneading with all your might till all the stickiness is gone. This will take 5-7 minutes. Now spread out the dough and splash 1 tbsp butter/margarine and fold in. Continue kneading till the butter is absorbed. Do not be tempted to add extra flour. Just keep kneading and in mo time the stickiness will be gone. Now add the remaining 1 tbsp butter and knead again till you have an incredibly soft and elastic dough. Congratulations! You are 70% done!!
Niw oil a big enough bowl to hold the doubled up risen dough and also oil the dough. Gently place it into the oiled bowl and keep covered in a warm place for 1- 11/2 hour till doubled in volume.
Once doubled, punch down the dough and knead for 3-5 minutes to bring the dough into a uniformly shaped loaf. Grease a loaf tin and place the shaped loaf in it. Cover again and leave to rise for another 1 hour.
Towards the end of the second rise, start preheating the oven at 180 degree celcius and also keep a small tray of water to build up steam.
Brush the top of the loaf gently with milk (room temperature) taking care not to deflate the dough. Bake in the preheated oven for 20-25 minutes till you get a dark brown top and the bottom sounds hollow when tapped.
Remove from the pan immediately and brush the top with butter. Cool completely on a wire rack before slicing.

Red Velvet Crinkle Top Cookies--No Butter Added

Let me be honest with you. This is messiest cookie recipe I have ever handled. I almost thought of binning it at one point as I was getting quite irritated with the mess. However, the cookies are undoubtedly the best Crinkle Top Red Velvet Cookies you would have ever made. What attracted me to this recipe when there were so many available on the net and quite fuss free too? Well, this recipe uses just 3 tbsp oil and this means you can enjoy them more guilt free than the regular buttered ones and without any compromise on taste too. So if you do not mind a little messy kitchen counter and sticky hands for a while then you have come to the right place and you are guaranteed to enjoy your effort at the end of it all.
Ingredients
60 gms chocolate melted (the original recipe used white chocolate but I used regular dark baking chocolate)
1 1/4 cup flour
2 tbsp cocoa powder
1 tsp baking powder
1/4 tsp salt
2 large eggs
3 tbsp oil
1 tsp vanila extract
2 tsp red food coloring (preferably use gel colour, either strawberry red or cherry red)
3/4 cup granulated sugar
Confectioners sugar/icing sugar for rolling

Direction
Take the chocolate in a microwave safe bowl and melt it in the microwave at a 30 second interval until melted and shiny.
In another bowl, mix the flour, baking powder, cocoa, and salt and keep aside.
In the same bowl where you melted the chocolate, add the eggs and whip till smooth. Now add the oil, Vanila, and food coloring and whip again. Add the sugar and mix. Now add the flour mixture and mix well with a spoon till everything is well combined. The mixture will seem quite liquidy for a cookie dough but just go ahead.

Now cover the bowl with a cling wrap with the plastic touching down on the top of the dough. I had transferred the dough entirely into the plastic wrap and that turned out quite messy while making balls out of the dough. So keep the dough in the bowl and just put the cling wrap tightly touching down on the dough. Put in the refrigerator and chill for a minimum of 2 hrs and upto overnight.
Now grease and line a baking tray and pre-heat the oven at 180 degree celcius.
Take the icing sugar in a plate and with a tablespoon/ice cream scoop, scoop out small balls and drop on the icing sugar. Roll it on the sugar with your hands and then flatten slightly and roll again in the sugar and place on the prepared tray. Sorry no pictures to share here as my hands were all doughy. Put the cookies 2" apart as they spread out a little while cooking and so keep some space to avoid sticking to each other. Bake in the pre-heated oven for 12-15 minutes or till the edges slightly firm up while the top is still a little soft to touch.
Cool in the tray for 5 minutes before transferring to a wire rack for cooling completely. Store in air tight containers.

Wholewheat Eggless Butterless One Bowl Chocolate Cake

It has been the most terrible week for me so far as parenting is concerned. Baby down with a terrible toddler illness and while she was just recovering, I caught the flu and now can hardly eat and drink. Two days I spent pitying myself. Today morning I pulled myself up, put in all my will power at work and started telling myself "I feel better so much better now!" I decided to let go that sickly feeling and instead do something constructive. Asked my baby if she is craving for some chocolate cake and she jumped with joy. Doing the dishes is a pain now and so came up with this amazing one bowl Wholewheat Eggless Butterless Chocolate cake I saw on pinterest yesterday with some changes of my own. The cake is soft, moist and spongy and super delicious!! Best part is you can eat it guilt-free.... I hope I can enjoy eating it soon (have a very very very painful throat)!!!!

Ingredients
1 1/2 cup whole wheat flour
3 tbsp cocoa powder (I used extra dark)
1 tsp baking soda
1/2 tsp salt
1 cup brown sugar (can be substituted with white sugar)
5 tbsp oil (I used rice bran oil but you can use extra light olive oil or any other unflavoured oil)
1 tsp Vanila extract
1 cup water (I used room temperature but you can use lukewarm too)
1 tsp white vinegar

Direction
Pre-heat the oven at 180 degree celcius and grease a 8" square tin.
In a bowl, mix the flour, cocoa, sugar, baking soda, and salt. Mix well and then add the oil followed by the Vanila extract and water. Use a balloon whisk for easy and proper mixing. You can add a handful of chocolate chips if you like for a more chocolatey flavor.  Lastly, add the vinegar and simply fold it in without much mixing. Pour the batter into the greased pan and bake in the pre-heated oven for 20-25 minutes until a toothpick inserted comes out clean. Cool on a wire rack and enjoy this guilt free delight. For the frosting, I melted some ferrero rocher chocolates (about 8) and added some warm cream (about 2-3 tbsp) till desired consistency. Frost the cake when completely cooled. The cake will keep good at room temperature in air tight container for 2-3 days.

Wholewheat Chocolate Banana Cake

The other day during my trip to the super market, my baby insisted on buying bananas and though I knew she wouldn't eat it, I couldn't refuse her. She ate just 1 out of three with much pain as she knew it was her mistake in buying them in the first place. She however could not show her goody self for the rest of the two and refused them as yucky!! With school starting today after holidays and snack boxes needed to be filled, I planned to hide the bananas behind a flavor she truly loves and combined it with the goodness of whole wheat flour. Result was an amazing soft and moist cake with a beautiful combination of flavors and topped with a humble ganache!!! Snack time just got more delicious!!
Ingredients
1 1/2 cup sugar (I used a mix of brown sugar and white sugar; You can increase the sugar by another 1/4 cup if you like it more sweet)
1 3/4 cup wholewheat flour
1/2 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup mashed banana (about 2 medium ripe bananas; the more ripe the better)
2 eggs
1 cup (240 ml) warm/lukewarm water
1/2 cup (120 ml) milk room temperature
1/2 cup (120 ml) unflavoured oil (I used extra light olive oil)
1 1/2 tsp Vanila extract

Direction
Pre-heat the oven at 180 degree celcius and line a 9" square pan with parchment paper.
Mix the sugars, flour, baking powder, baking soda, and salt.
In another bowl, mash/puree the bananas.
To this, add the eggs, milk, oil, vanilla extract and warm water. Take absolute care that the water is "not" hot, but just warm. Whip together till mixed well. Now, add the flour mix to the wet ingredients little at a time till everything is mixed well. Take care that no lumps remain. The batter will be quite thin. Don't worry as that is how it is supposed to be. Pour the batter in the prepared pan.
Tap the bottom of the pan on the kitchen counter for a couple of times and bake in the pre-heated oven for 30-35 minutes till  a toothpick inserted comes out clean.
Cool on a wire rack completely before slicing.
For frosting, I used ferrero rocher chocolates along with a few other chocolates lying in the fridge (about 1 cup) and added 1/4 cup hot cream (warmed till just about boiling point). Mix well and spread. If you want a more flowing consistency, add more hot cream. Apply the frosting and let it set for 1/2 hour before slicing.

Baked Doughnuts

Somethings have to just wait for the right time just like my doughnut pan which I had bought almost 2 years back and since then had been patiently waiting in my archives to be used someday!!! I really regret for keeping it waiting for so long. But as they say, better late than never!! Der aaye Durust aaye!! I am loving it. Another successfully acquired baking gadget!! Yippee!!
Ingredients
1 cup flour
3/4 tsp baking powder
1/4 baking soda
1/2 tsp salt
1/3 cup brown sugar
2 tbsp butter melted
1 large egg
1 tsp Vanila essence
1/2 cup buttermilk

Direction
Mix the flour, baking powder, baking soda, salt and sugar in a bowl and keep aside.
Whip the egg, buttermilk, vanilla essence, and cooled and melted butter. Add the dry ingredients into the wet and mix well. Ensure there are no lumps while taking care at the same time that no lumps remain.
I am using my doughnut maker but you can use a regular baking tray and keep a small piping nozzle in between to make the hole and keep it there while baking. Make sure however that you use the aluminium ones instead of the plastic ones or anything which helps you to keep the doughnuts in shape. If using the oven , pre-heat to 190 degree celcius and bake in the pre-heated oven for 8-10 minutes. Do not overbake.
If using the doughnut  maker, pre-heat  it before using and then pour 1 -2 tsp of the batter into the holes and close the lid. Bake till golden on one sude and then flip and bake for 2-3 minutes more.

Let them cool on a wire rack. Meanwhile, prepare the ganache. I used unused regular chocolates lying in the fridge and melted them. Added cream to a consistency I desired and added 1 tsp honey to make it glossy. Once cooled, dip the doughnuts top side down into the
Chocolate ganache and let it set for 30 minutes before serving.

Zucchini Mozarella Tart with Sundried Tomatoes

When I was planning my all Italian dinner last week, the dish that troubled me most was this tart. With the restriction of making it eggless, I was completely clueless and could hardly find any ideas which would give the tart some body and not make it look like a pizza. I remembered a tart I had at my Dutch friend's house and I got in touch with her. She was kind enough to help me with the recipe and everything else just fell in place. It was so wonderful to see my guests enjoy the menu and I just couldn't stop feeling proud of myself.
Ingredients
1 9" pie crust (I used storebought pie crust mix)
1 block of Mozarella cheese (I used Gouda cheese as I had a block lying with me but mozzarella works equally fine)
1 zucchini cut into thin slices
1 medium onion thinly sliced
1/4 cup Sundried tomatoes drained

Direction
Blind bake the pie crust as per the packet instructions. Blind baking is baking the rolled out dough fitted in the tart pan and pricked with a fork all over so that it doesn't rise up. You can also place a heavy weight like uncooked rajma, chick peas etc.
Now let the pie crust cool completely before filling. Once cooled, grate the gouda/mozzarella cheese and spread all over the base covering all the corners. Now place the zucchini in circles starting from the outside. Now spread the onion slices similarly in between the zucchini and follow with the Sundried tomatoes and freshly chopped parsley. Finally, cover with another layer of grated Mozarella/gouda cheese and bake in the pre-heated oven at 200 degree celcius for 15-20 minutes till the cheese is melted and slightly golden and the zucchini softened. Keep the tart inside the oven for 5 more minutes after switching off so that the zucchini gets cooked without burning the cheese.
Serve hot!

Garlic Knots

Bread baking is a superb stress buster and very satisfying too. When you see your ball of dough puff up like a mountain in the first rise, your chest also doubles up equally with joy in anticipation of eating something awesomely yummy fresh and hot from the oven. I had hosted an all Italian dinner at my place this weekend and to make it even more enticing, I decided to bake my bread at home to compliment my Lasagna. The bread superseded my expectations in every way right from the first rise, the oven spring to the cottony soft texture!! My happiness knew no bounds and even more so when my guests couldn't stop praising my efforts and the food.

Ingredients
3 cups all purpose flour (I used bread flour but APF works equally well)
2 1/4 tsp active dry yeast
1 tbsp sugar
1 tsp salt
3/4 cup warm water plus 1/2 cup for kneading
2 tbsp butter softened
For the garlic wash
1 tbsp butter
2 tbsp olive oil
1-2 tbsp garlic finely chopped (depending in how garlicky you want your knots)
2 tbsp parsley finely chopped

Direction
Dissolve the yeast in 3/4 cup warm water (43.3 degree celcius to be precise or till you are able to bear a drop of water on the back of your wrist) and sugar and let it stand till frothy and doubled in volume.
Mix the flour and salt and add the frothy yeasty liquid to it. Mix with your hands or a spoon until the flour just comes together. It is not required that it forms a dough at this point. Cover and let the dough hydrate for 15 minutes.

Now add the remaining water little at a time and start kneading the dough. Once the dough starts coming together, transfer to a clean kitchen counter or silicon mat and knead with the heels of your hands till the stickiness of the dough is almost gone. Now flatten the dough slightly with your hands and put 1 tbsp butter on the flattened base and fold in. Bang, fold, and knead the dough with all force till the butter is all absorbed and the dough is smooth with no stickiness. Again roll out the dough with the hands and apply the remaining butter and fold, bang, fold and knead like before till the dough is smooth to touch and and soft and elastic. Oil a bowl and transfer the dough to the bowl and grease it too. Cover and let it rest either in one corner of the kitchen counter or inside the microwave (basically a warm and humid place) until doubled in volume.
Now deflate the dough and punch down the dough for 2-3 minutes. Line a baking tray with parchment paper and divide the dough into two. Keep one part of the dough in the bowl covered while working on the other. Using a rolling pin, roll out the dough into a circle of 1/3" thickness. With the help of a knife cut long strips.

Pick one strip and make a knot (bring both ends together and then push one end into the circle making a knot). Place it on the prepared baking tray.
Repeat with the rest of the strips and the dough. Place the knots 1" apart as you keep them covered in a warm place for their second rise, about 1 hour or until doubled in size. Singapore is quite hot and humid these days and so it took me just 45 minutes in both the proofings for the dough to rise.
Pre-heat the oven 20 minutes before the end of the second rise at 225 degree celcius. Now make the garlic wash. Melt the butter and oil together on the stove top and add the garlic. Stir for a minute and then remove from heat and add the parsley. Stir and cool it to room temperature. Now brush the cooled garlic wash generously (but gently) on the puffed up knots. Take care not to deflate the risen knots by hard brushing or hot garlic wash.
Bake in the pre-heated oven at 200 degree celcius for 15 minutes or until golden on top and sounds hollow when tapped. Remove from the oven and brush again with the remaining garlic wash. Transfer to a wire rack and cool completely!
